Today I have something special for you. The most delicious vegan cheesecake I’ve ever made 😙… two gorgeous flavours that you can’t resist : @suncorefoods sapphire wolf berry (black goji) 💜and @suncorefoods emerald pandan leaf 💚 Are you drooling already 😝😉

Here’s the recipe for you:
Crust:
200 g dates
1/2 c rolled oats
1/2 c quinoa flakes @suncorefoods
1/2 c walnuts
1 tbsp water if needed
Berry Filling:
1 1/2 c cashews soaked overnight
1-2 tbsp @suncorefoods Sapphire wolf berry powder
4 tbsp lemon juice
6 tbsp coconut oil
2/3 c coconut cream
3 tbsp maple syrup (agave..)
1 c blueberries
Blend until smooth and creamy
Pandan filling:
1 1/2 c cashews soaked overnight
1-2 tbsp @suncorefoods pandan leaf powder
4 tbsp lemon juice
3 tbsp coconut oil
2/3 c coconut cream
3 tbsp maple syrup (agave..)
1 1/2 avocado
Blend until smooth and creamy
Cool at least for 4 hours before serving.
