INGREDIENTS 👇
Recipe for approximately 18 buns
Yudane:
75g Flour
75g Hot Water (boiled and cooled)
DOUGH:
All of Yudane
350g Bread Flour
210g Unsweetened Almond Milk (or any plant-based milk of your choice)
1 Flax Egg (1 tablespoon ground flaxseed + 2.5 tablespoons water, let it sit for a few minutes)
50g Sugar
15g Vegan Milk Powder (optional)
6g Salt
6g Instant Yeast
60g Vegan Butter
Zest of 1 Orange
As many vegan dark chocolate chips as you desire
SPICES:
2 Cinnamon Sticks or 1 Tsp Cinnamon Powder
2 Nutmeg (remove shell) or 1/2 Tsp Nutmeg Powder
10 Green Cardamom (remove shell) or 1/2 Tsp Cardamom Powder
Pound into a fine powder using an electric grinder or pestle and mortar
SUGAR GLAZE:
1/4 Cup Water
2 tablespoons Sugar
CROSS:
50g Flour
60g Water
Adjust accordingly until you get a pipe-able consistency
METHOD:👇
Mix the Yudane ingredients together until a cohesive mass forms, then leave it to cool to room temperature (or refrigerate for 4-12 hours).
In a large mixing bowl, combine the Yudane, bread flour, almond milk, flax egg, sugar, vegan milk powder (if using), salt, instant yeast, and vegan butter (instead of regular butter).
Add 2 tsp of the powdered spices, orange zest, and vegan dark chocolate chips, and mix until evenly incorporated into the dough.
Proof the dough until it doubles in size.
Degas the dough and divide it. Roll into tight balls and place them in a baking tin.
Proof the buns until they double in size.
Brush with a plant-based milk wash and pipe the crosses using the flour and water mixture.
Preheat and bake at 185°C for approximately 20 minutes.
While the buns are still hot, sugar glaze them.
