π INGREDIENTS:
πCRUST:
βͺοΈ12 dates (pits removed, soak in hot water 10min)
βͺοΈ1 tsp cinnamon
βͺοΈ1 cup unsalted macadamia nuts
βͺοΈ1 cup unsalted cashews
βͺοΈ1 tsp vanilla
βͺοΈ1/2 cup shredded coconut
βͺοΈ1/4 cup melted coconut oil
π₯PIE FILLING:
βͺοΈ1/2 can (200ml) coconut milk, full fat
βͺοΈ2 avocados
βͺοΈ1/2 cup maple syrup
βͺοΈ1/3 cup lime juice
βͺοΈ3/4 cup melted coconut oil
βͺοΈ1 tsp vanilla
βͺοΈ2 handfuls of spinach (add more if desired)
βͺοΈzest from 2 limes

1οΈβ£Grease 8 inch pie pan and place baking paper on the bottom
2οΈβ£Combine crust ingredients in a food processor. Press into pan, allow to chill in fridge while you make the filling
3οΈβ£Add all filling ingredients into food processor, blend until smooth. May take a few minutes to grind up
4οΈβ£Pour over chilled crust. Set in fridge to firm up for 1hr to 2hrs. It firms quick! π
