๐Ÿ“ INGREDIENTS:

๐Ÿ’šCRUST:

โ–ช๏ธ12 dates (pits removed, soak in hot water 10min)
โ–ช๏ธ1 tsp cinnamon
โ–ช๏ธ1 cup unsalted macadamia nuts
โ–ช๏ธ1 cup unsalted cashews
โ–ช๏ธ1 tsp vanilla
โ–ช๏ธ1/2 cup shredded coconut
โ–ช๏ธ1/4 cup melted coconut oil

๐Ÿฅ‘PIE FILLING:

โ–ช๏ธ1/2 can (200ml) coconut milk, full fat
โ–ช๏ธ2 avocados
โ–ช๏ธ1/2 cup maple syrup
โ–ช๏ธ1/3 cup lime juice
โ–ช๏ธ3/4 cup melted coconut oil
โ–ช๏ธ1 tsp vanilla
โ–ช๏ธ2 handfuls of spinach (add more if desired)
โ–ช๏ธzest from 2 limes

๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ DIRECTIONS:

1๏ธโƒฃGrease 8 inch pie pan and place baking paper on the bottom
2๏ธโƒฃCombine crust ingredients in a food processor. Press into pan, allow to chill in fridge while you make the filling
3๏ธโƒฃAdd all filling ingredients into food processor, blend until smooth. May take a few minutes to grind up
4๏ธโƒฃPour over chilled crust. Set in fridge to firm up for 1hr to 2hrs. It firms quick! ๐Ÿ˜Š
