INGREDIENTS
For the crust:
270g (2 ¼ cups) graham cracker crumbs
73g (⅓ cup) brown sugar
141g (10 tbsp) unsalted butter, melted
For the filling:
680g (24 oz, 3 blocks) cream cheese, softened
187g (1 ½ cups) powdered sugar
1 tbsp lemon juice
2 tsp vanilla extract
80g (⅓ cup) sour cream
360ml (1 ½ cups) cold heavy whipping cream
To decorate:
120ml (½ cup) cold heavy whipping cream
1 cup fresh berries (strawberries, raspberries, blueberries, or a mix)
1. Make the crust
In a bowl, stir together the graham cracker crumbs and brown sugar. Pour in the melted butter and mix until the crumbs are evenly coated and hold together when pressed between your fingers. Transfer to a 9-inch springform pan and press firmly and evenly across the base, using the bottom of a glass or measuring cup to pack it tight. Place in the fridge or freezer while you prepare the filling.
2. Beat the cream cheese
In a large bowl, beat the softened cream cheese on medium speed until completely smooth and lump-free, scraping down the sides of the bowl as needed.
3. Add the flavor
Add the powdered sugar, lemon juice, and vanilla extract to the cream cheese, and beat until fully combined and smooth. Mix in the sour cream until the batter is silky and uniform.
4. Whip the cream
