INGREDIENTS
300g all-purpose flour
150g cold vegan butter
100g powdered sugar
1 medium flaxseed egg (1 tbsp ground flaxseed + 3 tbsp water)
1 packet of vanilla extract
For filling and decorating
Dairy-free dark chocolate, melted as needed
Dairy-free white chocolate, melted as needed
White chocolate discs as needed
Red gel food coloring as needed
Green gel food coloring as needed
INSTRUCTIONS
In a mixing bowl or using a stand mixer with a paddle attachment, combine sifted flour and powdered sugar.
Add cold vegan butter in small cubes and start mixing until it reaches a sandy consistency.
Incorporate the flaxseed egg and vanilla extract, forming a dough.
Wrap the dough in plastic wrap and refrigerate for one hour.
Roll out the dough on a floured surface and cut out cookies.
Half of them should have a hole in the center to form pairs.
Bake in a preheated static oven at 180°C (350°F) for 8-10 minutes.
Remove the cookies from the oven and let them cool.
Fill the eye-shaped holes with melted white chocolate and the mummies with dairy-free dark chocolate.
For the eye decorations, while the white chocolate is not fully solidified, create veins by dipping a toothpick in red food coloring and following the video.
Then, use a toothpick with green-colored white chocolate and dairy-free dark chocolate for the rest.
For the mummies, use white chocolate discs and dairy-free dark chocolate for the eyes and white chocolate for the lines.
