INGREDIENTS
For the crust:
Biscuits of your choice: 100 g
Melted butter: 50 g
For the strawberry sauce (confit):
Fresh strawberries: 250 g
Sugar: 1 tsp
Ladyfingers: 6 pieces
For the mascarpone cream (eggless):
Mascarpone cheese: 500 g (room temperature)
Powdered sugar: 70 g
Sweetened condensed milk: 3 tbsp (about 45 g)
Cold whipping cream: 400 g (instead of 300 g)
For topping (optional):
Melted Lotus biscuit spread (or white chocolate ganache, or more strawberry sauce)
INSTRUCTIONS
Prepare the crust
Crush biscuits into fine crumbs.
Mix with melted butter and press firmly into the bottom of a 20 cm mold/ring.
Smooth and compact with the back of a glass. Chill while preparing the filling.
Make the strawberry sauce
Chop strawberries, add sugar, and cook over medium heat until they release juices and start boiling.
Remove from heat and let cool completely.
Prepare the mascarpone cream (eggless)
In a large bowl, whisk mascarpone, powdered sugar, and condensed milk until smooth.
In another bowl, whip the cold cream until stiff peaks form.
Gently fold whipped cream into the mascarpone mixture until you get a light, fluffy cream.
Assemble the tiramisu
Slice strawberries and line them around the inner wall of the mold for decoration.
Spread half of the mascarpone cream over the crust. Smooth evenly.
Dip ladyfingers quickly into the cooled strawberry sauce (both sides).
Arrange them on top of the cream.
Spread the remaining strawberry sauce evenly over the ladyfingers.
Add the rest of the mascarpone cream and smooth the surface.
Chill
Refrigerate at least 8 hours, or overnight for best results.
Final touch
Spread melted Lotus biscuit cream (or your topping of choice) over the final cream layer.
Chill for 30 minutes, then carefully remove the ring.
